Air Fryer Steak

Ingredients

For the Compound Butter

  • 1 large head of garlic
  • 1-2 Tbsp extra virgin olive oil
  • 1 4-oz/100g stick unsalted butter, softened
  • 3 Tbsp fresh chives chopped
  • ¼ tsp salt

For the Steaks

  • 2 10-oz/3oog strip steaks, trimmed
  • 1 Tbsp extra virgin olive oil
  • Sea salt and black pepper to taste

Instructions

  • Set the air fryer to the "Air Crisp" function if yours has that, and set the temperature to 400°F/200°C and set the timer to 20 minutes. Press “Start” to preheat the unit.
  • Meanwhile, remove the outer papery layers from the garlic. Carefully slice off the top of the head of garlic with a sharp knife, making sure each clove is exposed. Drizzle some olive oil onto each head of garlic and wrap each head in a small square of aluminum foil.
  • When the air fryer has finished preheating, place the prepared garlic in the air fryer basket. After 20 minutes, check the garlic to make sure it is roasted through. If more time is necessary, rewrap the garlic and return to the air fryer for several more minutes. Use the roasted garlic immediately or store it in an airtight container in the refrigerator for up to one week.
  • Squeeze the roasted garlic cloves out of their casing into a bowl with the softened butter, chives, and salt and stir until thoroughly combined. TIP! Make sure the garlic cloves are broken up and evenly distributed throughout the mixture.
  • Transfer the butter mixture to a sheet of plastic wrap, shape it into a log, and cover it tightly. Refrigerate for about an hour until firm and ready to use.
  • Remove the steaks from the refrigerator 30 minutes before cooking. Brush the steaks with olive oil and season generously with salt and pepper. Set them aside.
  • Preheat the air fryer to 400°F/200°C and set the timer to 8 minutes for medium rare, 10 minutes for medium, and 12 minutes for well done.
  • When the air fryer is ready, add the steaks to the basket in a single layer without overcrowding. Cook for 4 minutes. Turn the steaks with silicon tongs and air fry for the remaining cook time. See Notes: You can check the internal temperature of the steaks using a good thermometer. The internal temperature will continue to rise several degrees while the steaks rest.
  • Remove the steaks from the air fryer and cover them loosely with aluminum foil. Rest for 5-10 minutes to give the juices a chance to settle.
  • Serve the steaks topped with some roasted garlic compound butter and your choice of sides. Enjoy!

Handy Degree of Doneness Chart

  • For medium-rare is 135°F (57°C)
  • For medium, 140°F to 145°F (60°C to 63°C)
