I’ve mentioned my love of Autumn before in my blog, and one thing I love about the cooler weather is digging out my slow-cooker and making stews and casseroles for the family. I love that I can throw everything into one pot, turn it on low, leave it all day (and sometimes overnight too) and dinner is all ready for when my boys are home from school and work :D

When cooking regular meals at home, I tend to just make it up as I go along…rarely following a recipe! So for this recipe, I have given the ingredients I used, but not the quantities, you can adjust to your family’s needs :)

Slow Cooker Autumn Ham Casserole

Ingredients

  • joint of gammon ham (I use smoked)
  • potatoes, peeled and chopped
  • carrots, peeled and chopped
  • onions, peeled and sliced
  • stock cubes (ham or chicken)
  • garlic, peeled
  • sweetcorn (or any other veg you like!)
  • cooking apples, sliced into wedges
  • bay leaves
  • freshly ground black pepper

I used new potatoes in this casserole, so didn’t need to peel them. I just halved or quartered, depending on their size, and threw them into the slow cooker pot, along with the carrots, onions, a few bay leaves and whole garlic cloves. I then twisted over some black pepper. At this point I added a splash of water and turned up the slow-cooker to ‘high’.

Sometimes I brown my meat first, before adding it to the slow cooker – I tend to do that mainly with beef, but since I was cooking with gammon on this occasion, I just placed the joint straight on top of the vegetables. I then added the stock – about half a pint or so. I used chicken stock as I had run out of ham. You could just use water – it’s up to you :)

On with the lid, and after an hour at high, I turn my slow-cooker down to low and leave to cook for 6 hours – at the very least – longer if I can. A couple of hours before I’m going to serve, I throw in some frozen veggies. In this case it was sweetcorn. I also added wedges of apple to give a fruity sweetness to the dish, and because we (us Brits) often eat pork with apple sauce :) You could thicken up the gravy with some cornflour/water or some gravy granules, but I didn’t on this occasion.

I served my Slow Cooker Autumn Ham Casserole with [freezer] Yorkshire puddings (I needed to use them up!)…everything else was already in the pot and ready to eat! Enjoy!
