Paleo Bacon Apple Hash

We have turned paleo and loving it! For years I’ve been bouncing around from diet to diet, and feeling worse and worse about myself, but finally, I think I’ve found a plan that fits for me. Both hubs and I are enjoying trying out new recipes we find online, or make up ourselves, and my husband recently found this recipe online and surprised me one morning with a plateful of this for breakfast! On looking at it your mind is fooled that there a little chunks of potato as you would normally find in a hash, but then you taste the sweet apple, which goes surprisingly well with the salty bacon, and dusted with cinnamon. This is now a favourite weekend breakfast for us! We switched the butter in the original recipe for olive oil instead, as we didn’t have any butter in the fridge!
