This recipe is for a tasty Cajun spiced chicken that my hubby made last week. We served it with couscous and salad for a fresh, almost summery (in this bleak mid-winter!) meal.

As I said at the start, we served our cajun chicken with salad and cous cous. I make my cous cous like this:

I take 40g cous cous per person and place into a bowl that has a lid. I add a 1 tsp chilli flakes, 1 tsp dried mint and 1 chicken stock cube crumbled in. I then just cover the cous cous with boiling water and stir. I pop the lid on the bowl and leave for 10 minutes or so. Fluff up with a fork and done!
