Roasted Rosemary Chilli Almonds

I always remember a big bowl of nuts sitting on the table at Christmas time when I was growing up. Brazil nuts, almonds, pecans, walnuts, hazelnuts; all encased in their hard shells with a dodgy nutcracker that only dad could work properly! I’m not sure why nuts are really traditional at Christmas, but they are!

As an adult, I can’t be bothered with the faff of trying to crack nuts, so I buy them ready shelled and then big up the flavour. In this recipe I am using fresh rosemary (but dried would also work if you can’t get fresh – we have a rosemary plant in the garden) and chilli powder to give almonds a warming, aromatic taste. They make a perfect party nibble to enjoy with cocktails or a glass of wine at a Christmas party (or any time of the year!)

 

Roasted Rosemary & Chilli Almonds

Use ready shelled nuts.
Ingredients
  • 300g almonds
  • 1 tbsp olive oil
  • 2 tbsps finely chopped fresh rosemary
  • 2 tsps chilli powder (mild or hot – it’s up to you!)
  • 1 tsp sea salt
Instructions
  1. Pre-heat oven to 160C/Gas 3
  2. Combine all the ingredients in a bowl and toss to coat evenly.
  3. Spread out onto a baking sheet and place in the oven.
  4. Roast for 20 minutes.
