Vinnie from Fox’s Biscuits sent me some packs of a new range of Taste of America biscuits to try out, and when the box of them arrived, I knew I’d turn some of them into biscuit truffles! I was sent four different flavours to try out – Mississippi Mud Pie Melts, Cherry Cheesecake Jam ‘n’ Cream, Key Lime Pie Crunch Creams and Blueberry Muffin Party Rings.

I decided to use the key lime flavour and made Key Lime Crunch Cream Halloween Truffles! I was going to cover my truffles with green candy melts and make little Frankenstein monsters from them…but it didn’t work that way >_<

I told you in yesterday’s post that I tried and failed at making some truffles because the candy melts I wanted to use, seized up on me when melting and the whole bag of them were ruined! Today I found some chocolate in my baking cupboard and the day was saved!

They are easy enough to make (apart from me fluffing up with candy melts!!) and do not require any baking! They are also really quick to put together and make an ideal last minute sweet addition to a party buffet.

I’ve made biscuit truffles before, last Halloween in fact! As well as at Christmas, and they always go down well!

You can use any flavour biscuits you like – I’ve used chocolate cookies and ginger snap biscuits in the past. But if you want to make these, you’ll need…

  • 2 packets Fox’s Key Lime Pie Crunch Creams
  • 1 heaped dessert spoon soft cream cheese
  • 150g chocolate (I used milk, but you could use dark or white chocolate)
  • Halloween sprinkles
  • cocktail sticks

You can crush the biscuits by hand by popping them in a plastic bag and smashing to smithereens with a rolling pin…or you can throw them into a food processor and whizz them until they’re crumbs.

Then, stir in the soft cream cheese – after a while, you’ll have to get stuck in with your (clean) hands and bring everything together to form a kind of dough.

Break off small pieces of the dough and roll between the palms of your hands to form balls – I made mine about 1″ in size, and got 12 truffles out of them…or you could make them smaller – your choice!

Place the biscuit truffles onto a tray and pop into the freezer for about 15 minutes to harden up.

To make dipping easier, you will need to secure in some cocktail sticks – I used Halloween ones that I happened to have in my baking cupboard. Melt a little chocolate, dip one end into the goo and insert into the frozen biscuit truffles. Put back in the freezer for a couple of minutes to set in place. You’ll notice that mine are set with some green stuff – this was the candy melts that then went awry on me!

Break the chocolate up into chunks and melt either in a microwave or over a double boiler on the hob. When melted, it’s time to dunk!

Take each truffle and dip into the chocolate until it is completely covered, use a spoon to get the top if they don’t quite go all the way in. Lift out and gently tap off the excess.

Place the truffle on a wire rack and shake over sprinkles of your choice (or leave plain!) and continue until you’ve dipped and sprinkled all of the truffles. Then, put in the fridge to set completely.

They don’t take long to set in the fridge – maybe 10 minutes? You can have these made and on a buffet table well within an hour! Or make them in advance and keep in the fridge until party time!
