Another family favourite, swapping beef mince out for turkey mince makes these meatballs a lot lighter in texture. When I give calories where it says serves 3 – 4 people, it’s because there are 3 of us in this family, but I often have left overs, so give two calorie counts. I hope that makes sense!

Herby Turkey Meatballs & Spaghetti

Serves 3-4 (603/452 calories)

Ingredients

  • 500g turkey mince
  • 2 slices wholemeal bread, whizzed into breadcrumbs
  • 1 medium egg
  • ½ medium white onion, finely chopped
  • handful of fresh parsley, finely chopped
  • 1 tsp dried rosemary
  • 1 tsp dried basil
  • ½ tsp freshly ground black pepper
  • 30g grated parmesan cheese
  • low/one calorie oil spray
  • 1 x 500g jar Dolmio Original Light Bolognaise Sauce (or your favourite pasta sauce!)
  • 120g dried spaghetti (40g per person)
  • 30g grated parmesan cheese to serve (optional)

Method

  1. To make the meatballs, put the mince, breadcrumbs, egg, onion, herbs, pepper and 30g parmesan cheese into a bowl and mix together with your hands. Form into balls of your preferred size. I can usually get about 15 meatballs from this mixture. Cover and refrigerate for about an hour.
  2. When ready to cook, heat a frying pan and spray with oil spray. Add the meatballs and brown on all sides.
  3. Transfer the meatballs to a saucepan and add the sauce. I swish out the jar with water (about half full) and add that too. Bring to the boil then reduce heat and simmer for 30 minutes until the meatballs are cooked through.
  4. Meanwhile, cook the spaghetti according to the package instructions.
  5. Serve 3-4 meatballs per person with sauce. Sprinkle 10g parmesan cheese on top per person (optional)
