Toad in the hole - a complete comfort food - but also very high in calories with sausage and batter...here is a low calorie version which I urge you to try - it's not exactly the same, I'm not going to kid you that like some diet recipes would lead you to believe, but it's very tasty and when watching the calories makes a great alternative! 

When it comes to the sausages to use, you need to look for the lowest calorie per sausage.  The ones I found were Tesco Healthy Living ones at 155 calories for two sausages.  So take this into account when I give the calories for this meal, you can reduce the calories by 155 and then add on the ones you have used.  Jump to print the recipe.


If you've made a 'real' toad in the hole, you know that you have to make the batter, part cook the sausages and then pour over the batter and place into a hot oven...works exactly the same with this low-cal version!

For some extra flavour I put fresh rosemary into the batter which was made with flour, egg and skimmed milk.    Batter needs a little standing time, so put it to one side for 10 minutes...


...which is conveniently the amount of time the low-fat sausages need to go into a hot oven for to brown off a little.



The batter gets poured over the sausages and quickly put back in the oven - the key to getting batter to rise is hot fat - there is a tiny bit from the sausages and it's just enough!


I then lined up the sausages all in a nice row :)


Then back into the oven for 20 minutes or so until the sausages are cooked and the batter has risen and golden.  This doesn't rise as much as a 'normal' batter would, but it does the job just fine!


Whilst the toad is in the oven cooking, you can make a nice onion gravy to go on top.  Slice some onions and put them in a small saucepan with some veg stock and simmer until the onions are softened, then add some gravy granules and stir.




Divide the toad in the hole in half and pour over the gravy. Serve with vegetables of choice...I used green beans and broad beans as I had those in the freezer. They were about 90 calories and are included in the recipe which you can jump to print, so you can adjust to suit your needs.

My husband and I both enjoyed this dish, and whilst not the same as a 'normal' high fat toad in the hole, it is a tasty alternative and I would encourage you to give this a try - especially if you're on a diet and missing some of your favourite dishes!




Toad in the Hole with Onion Gravy
Serves 2 - 399 calories per serving

Ingredients
  • 60g self raising flour
  • 1 medium egg
  • 150ml skimmed milk
  • freshly ground black pepper
  • 2 sprigs of fresh rosemary, chopped
  • one-calorie spray oil
  • 4 reduced fat sausages (approx 77 calories per sausage)
  • 1 onion, sliced
  • 200 ml vegetable stock
  • 1 tsp gravy granules
  • 80g baby broad beans
  • 80g green beans 



Method
  1. Preheat the oven to 220C
  2. Whisk the flour, egg and milk together until smooth.  Stir in the black pepper and rosemary.  Leave to stand for 10 minutes
  3. Lightly spray a non-stick ovenproof dish with the oil spray, add the sausages and cook for 10 minutes.
  4. Pour the batter around the sausages and cook for a further 20 minutes until the sausages are cooked and the batter is risen and golden.
  5. Cook the sliced onion in the vegetable stock in a pan over a low heat until softened.  Stir in the gravy granules (thin out as required)
  6. Serve the toad in the hole straight away with the onion gravy poured on top and with some steamed vegetables as suggested in the recipe (approx 90 calories)

Sweet and Sour Pork - Under 400 Calories Recipe

Here is a recipe for a delicious low calorie Chinese favourite - Sweet and Sour Pork.


Another easy to make dish, that's all in the preparation by cutting your meat into strips, making the sweet and sour sauce, chopping the pineapple and vegetables, and boiling the noodles.  Jump to print the recipe using the Print Friendly button at the end of this post.


Even though I'm using one-calorie oil spray, I always get my wok hot before cooking so that everything cooks quickly.  If needs be, I splash in a drop of water to 'steam-stir-fry' and stop things from sticking.


The veggies go in next, continually stirring around (adding another splash of water if necessary). Then the sauce gets added, and stirred until thickened.


Toss the pre-cooked noodles through the saucy meat and veg and divide between two serving dishes.


Enjoy your low-cal meal!  We certainly did!




Sweet and Sour Pork with Egg Noodles
Serves 2 - 300 calories per serving

Ingredients
  • 80g dried egg noodles
  • one-calorie oil spray
  • 250g lean pork, sliced into thin strips (or you can use the same amount of skinned chicken breast)(All visible fat removed)
  • 2 garlic cloves, crushed
  • 4 spring onions, sliced diagonally
  • 1 large carrot, cut into matchsticks
  • 1 bell pepper (colour of your choice), deseeded and cut into chunks
  • 100g sugar snap peas
  • 2 slices of canned pineapple in natural juices, cubed
  • freshly ground black pepper
For the sweet and sour sauce
  • 1 tbsp light soy sauce
  • 1 tbsp Shaoxing rice wine or dry sherry
  • 2 tsp black rice wine or white wine vinegar
  • 2 tbsp pineapple juice (from the can of slices above)
  • 1 tbsp tomato purée
  • juice of 1 large orange
  • 1 tbsp cornflour



Method
  1. Prepare the sweet and sour sauce by mixing together all the ingredients in a bowl until smooth.  Set aside.
  2. Cook the egg noodles according to the instructions on the packet.
  3. Heat your wok or deep frying pan and spray with the oil spray.  Add the pork strips and stir-fry for 4 minutes until cooked.
  4. Stir in the garlic, spring onions, carrot, bell pepper and sugar snap peas and stir-fry for 3 minutes.
  5. Add the pineapple and stir in the sweet and sour sauce.  Stir for about a minute whilst the sauce thickens.  Season with black pepper.
  6. Stir through the cooked and drained egg noodles and divide between two serving bowls.

Royal Wedding Party - Flashback Friday

29th April, 2011 was the royal wedding of Prince William to Kate Middleton - and as a Brit, it was a wonderfully patriotic day. I'm not a royalist by any means, but there is something about our royal family that makes you proud to be British!  All the pomp and circumstances - I love it!  It also gave me an excuse to throw a party!

I love a good [royal] wedding and we'd not seen one of this scale since Lady Di married Prince Charles in 1981. I was about 5 years old for that and remember watching it on the TV with my family.

As it's Friday, it's time for a flashback, so don your tiara (like I did for the occasion!) and read on to find out how we celebrated the Royal Wedding, 2011 :)


Of course, the shops were stocked with Union Jack flags and bunting - and it was the easiest way to decorate the house for this most British of days ^_^






 


I made some paper chains using red, white and blue strips of paper which I hung up wherever I could...


And I also made lots of red, white and blue rosettes out of tissue paper.  I made them recently for St. Patrick's Day too using the Irish flag colours, and you can find a tutorial here if you'd like to make some yourself for your event.


For a bit of fun, I made some Wills & Kate masks, by printing off their faces, sticking to some card, cutting out eye holes and attaching to lollipop sticks.




My cat, Pumpkin (of course!) even got in on the celebrating!



I decorated my serving counters with red, white and blue crepe paper, as well as some red and blue stars.  I printed off food labels and mounted them on red and blue card, and bought Union Jack themed plates, cups and napkins.

For the buffet, I went with a 'Best of British' theme - making (and buying) food that was traditionally British...

Sandwiches were filled with cheese & pickle, egg mayonnaise, honey roast ham, and beef & horseradish.


I couldn't have a British buffet without some cubes of Cheddar cheese and pineapple on sticks! There was also a cheese and onion quiche (not British, but *shrug* it's always on a British buffet!), Melton Mowbray pork pies, Scotch eggs and some tomatoes and cucumber to keep it healthy!


Also can't have a British buffet without cocktail sausages!


Some chicken drumsticks, coronation chicken in mini bread rolls and some salads completed the savoury side of the buffet.


For sweet treats, I went with the Devon/Cornish/Dorset favourite - scones with clotted cream and jam - one of my favourites when I am visiting that part of the UK!  Along with a bowlful of strawberries, raspberries and blackberries, and some shop bought bakewell tart slices and a British biscuit selection.

 



London was going to be mayhem on the big day, so we stayed at home and watched the events unfold from the comfort of our living room...but it didn't stop me taking photographs, of the TV!!! You may think this bonkers, and so do I, but I've now got my own photographic memories of the momentous occasion in British history!

And actually, it runs in the family (taking photos of a royal wedding from the TV that is, not being bonkers...although, probably that too!), because on looking through old family albums I found several photos that my dad must have taken of the 1981 royal wedding with Charles and Diana!











So there you have it...this was how we celebrated the wedding of Prince William and Kate Middleton...it was  such a lovely day and we all really enjoyed ourselves!

This summer we have the Queen's Diamond Jubilee...I will be doing a family get together for this - I plan on preparing more from scratch, and ideas are already flowing on how I should decorate and stuff, so look out for posts on that soon!

I hope you've enjoyed today's flashback, and for me, it's always fun to walk down memory lane :)
