Holidays in Cyprus, as a child, often involved walking along the seafront, and my dad buying us all a grilled corn from a vendor along the beach. All charred and sweet, and sprinkled with salt - delish!
Corn on the cob, cooked over charcoal is one of my favourite things to eat when we have a barbecue, so it was no surprise that I threw cobs onto the grill for our Late Summer Barbecue
Using fresh corn on the cob is best, as they have (I think) a completely different flavour to frozen cobs. Just peel back the husk, and place on the grill - turning every so often until golden (and sometimes a little charred!). Sprinkle with salt and enjoy!
