Moroccan Lamb Burgers

It was a Jamie Oliver recipe that I saw on his Summer Food Rave Up TV programme a few days before, so it was a good excuse to try out something new :)
Moroccan Lamb Burgers
Makes 10
Burger Ingredients
- 1kg lamb mince
- 1.5 tsp sea salt
- 1.5 tsp ground black pepper
- 1 tsp cumin seeds
- 1.5 tsp ground coriander
- 1.5 tsp garam masala
- 3 tsp smoked paprika
- olive oil
- 10 soft rolls
- salad leaves
Burger Dressing Ingredients
- 170g pot of Greek yoghurt
- 1 – 2 tsp harissa paste
- lemon juice
Method
Place all the spices into a pestle and mortar and give a good grind until well combined. Sprinkle onto a plate.
Form your lamb into 100g pattys (I’ve got a burger press) and then place a burger on top of the spice mix. Press down so that the spices cover the burger, and flip over and repeat on the other side. You can add a drizzle of olive oil and rub over to help the spices to coat the meat. (I didn’t, and kept them lower fat by using one-cal oil spray)
Cook the burgers on the grill for about 6 minutes on each side until cooked through. The spices may char, but this adds to the flavour!
To make the dressing, stir 1 – 2 teaspoons of harissa paste (or to your taste) into a pot of yoghurt. Squeeze in some lemon juice (again to taste). Done!
To serve the burgers, toast the soft rolls on the grill and spread with the yoghurt dressing. Place a lamb burger on top and add some salad leaves.
Very simple to make, and delicious to eat, and go well with my Moroccan Vegetable and Chickpea Tagine.
